Chocolate Chip Cookies!

I love chocoloate chip cookies, okay...who am I kidding, I really like any kind of cookie, well..except oatmeal raisin...they would be okay without the raisins, just oatmeal. Anyway, see how easy I get side tracked....

These chocolate chip cookies are my hands down favorite. I have tried ALOT of chocolate chip cookie recipes and this recipe from the "Mennonite Comminty Cookbook" always has the same results....FABULOUS!

Chocolate Chip Cookies
1/2 C. Butter
1/2 C. Brown Sugar
1/2 C. Granulate Sugar
1 Egg
1 1/2 C. Flour
1/2 tsp. Salt
1/2 tsp. Baking Soda
1 pkg. Chocolate Chips (7 oz.-they are usually sold in 12 oz. bags...so you can just have a few extra for sneaking, while the kids aren't looking)
1 Tbsp. Hot Water
1 tsp. Vanilla
DIRECTIONS: Preheat oven to 375 degrees. Cream together butter and sugar. Add egg, water and vanilla. Beat until fluffy. Add flour, baking soda and salt. (The recipe says to sift the dry ingred. together....I do not, and the cookies turn out fine). Beat until smooth. Stir in chocolate chips. Drop by teaspoonfuls onto a greased cookie sheet. Bake for 10 minutes, remove from oven and allow to sit on cookie sheet for 2 minutes. Remove to cooling rack.

ENJOY!

Derby Day Fun!!

So, Saturday was the Kentucky Derby and no, I don't watch the Derby~but I like the idea of Derby Day Parties....I mean really...fun hats, good food, mint juleps (okay, maybe not mint juleps, but they sound so refreshing...except I don't really like liquor so maybe some mint tea or meadow tea would be more suitable to my taste), it is just a good combination for a good reason to host a party. It was actually a work weekend for me so we just had a Derby Day potluck~southern style pulled pork sandwiches, coleslaw, veggies, empanadas, chips and salsa, cookies and Derby Pie! Yep, that's right, Derby Pie....if only I had a picture of the gooey, chocolatey, pecany insides! It is so easy to make~I can't even begin to tell you how easy it was to make~so here is the recipe:

Derby Pie:

1 Frozen, deep dish pie crust
2 Eggs
1/2 C. Flour
1/2 C. Sugar
1/2 C. Brown Sugar
3/4 C. Butter, softened
1 C. Semi-Sweet Chocolate Chips
1 C. Chopped Pecans
DIRECTIONS: Preheat oven to 325 degrees. Beat 2 eggs until frothy. Add flour and sugars. Add softened butter. Next stir in chocolate chips and pecans. Spread into pie crust. Place in oven and bake for 55-60 minutes. Remove from oven to cooling rack, allow to cool before serving. (If pie is to hot, it will fall apart when trying to serve). Serve with vanilla ice cream or Cool Whip. Enjoy!

Here's to stomping divots and wearing fun hats.....HAPPY EATING!

Avalanche Bars!

I am doing a second post today because these NO BAKE bars are great!!!!! (I even snuck them into the movies with us!). I found the recipe on the Cookies and Cups blog that is listed on my site!
Here is a question for everyone.....why do rice krispies stay crisp in recipes like this or the traditional rice krispy treats, but they get horribly soggy in milk???? Oh well, just so they stay crispy in the yummy treats....maybe because it is cereal I will have them for breakfast tomorrow? If they make it that long!

This is all you need for these treats....

Melt your white chocolate chips and then stir in peanut butter...

Yummy, yummy, yummy! (I added the heart shaped sprinkles for fun!)....

Avalanche Bars
1 Pkg, White Chocolate Chips
1/4 C. Creamy Peanut Butter
3 C. Rice Krispies
1/4 C. Mini Chocolate Chips + 2 Tbsp. for topping
1 1/2 C. Mini Marshmallows
DIRECTIONS: Melt white chocolate chips in microwave. Start by microwaving 1 minute and then stir. Continue microwaving in 30 second intervals, stirring each time, until melted. Stir in Peanut Butter. Mix in Rice Krispies, stir until well coated. Allow to cool for approx. 15-20 minutes - stirring every 5 minutes. Stir in mini chips and marshmallows. Press into a greased 8x8 baking dish. (Be careful not to make mixture to compact, it will harden and you will not be able to cut it). Sprinkle chocolate chips on top. Allow to cool. Cut in to bars and enjoy!!
