Crock Pot White Chicken Chili
1 1/2 lb. Boneless, skinless chicken breast (I used 2 large)
2 Cans Canellini Beans
1 Bag Shoepeg Corn (frozen)
2 Tbsp. Minced Onion
3 tsp. Cumin
3 tsp. Minced Garlic, (I used Tastefully Simple's Garlic, Garlic)
1/2 tsp. Oregano
32 Oz. Low Sodium Chicken Broth
Salt & Pepper to taste
DIRECTIONS: Add beans, chicken, broth and seasonings to crock pot. Cover and cook on low for 8-10 hours. Shred chicken and add corn. Continue cooking for approx. 1/2 hour or until corn is cooked. Serve with shredded cheese, sour cream and tortilla chips!

A Fun New Christmas Toy and Skinny Baked Potato Soup!
Happy New Year, Everyone! I am glad to be back to the routine of work, school and schedules! I know it sounds crazy, but I am a person who functions well with a routine - I am a planner....not everything always goes as planned (like catching the oven on fire when using the self-clean function...no worries, the fire was contained to the oven and didn't escape and the oven still works!).
Anyhow, my in-laws graciously gave me a Bed, Bath and Beyond gift card for Christmas.....hello, can you say kitchen explosion store! I LOVE it. I purchased this handy little immersion blender or hand held blender...whatever you want to call it, it is the nicest thing! How did I not have one of these before! I am wanting to puree everything! (If only I had one of these when the kids were babies....they may have gotten more homemade baby food).

I bought it because of this recipe I found for a "skinny" baked potato soup. I am going to be trying to post some "healthier" recipe choices. Don't fret, I will still have tasty little tidbits, because a girl has to have her sweets and savories!
Here is the finished product of the soup...it heats up well and tasted great for my lunch today!

Skinny Baked Potato Soup (from Skinnytaste.com)
2 Medium Baking Potatoes, baked & cooled
1 Small head of cauliflower, stem removed and cut into florets
1 1/2 C. Fat Free Chicken Broth
1 1/2 C. 1% Reduced Fat Milk
1/2 C. Light Sour Cream
10 Tbsp. reduced fat, shredded, sharp cheddar cheese
6 Tbsp. Chopped Chives (I used green onions)
3 Slices Turkey bacon, cooked and crumbled
DIRECTIONS: Bake potatoes at 400 for 1 hour; or until tender. Cool, peel and cut potatoes into chunks. Steam cauliflower with water in large covered pot until tender. Drain and return to the pot. Add chicken broth, milk, potatoes and bring to a boil. Using your hand blender, puree until smooth. Add sour cream, 1/2 the chives and salt/pepper. Cook on low another 5-10 minutes. Stir occasionally. Serve hot, top with 2 Tbsp. cheese, chives and bacon. (This recipe makes 5 one cup servings).
If anyone is following Weight Watchers, this recipes old points=4, the new points plus is=5.

Ham, Potato, Corn Soup!
Easy, quick meals seem to be out motto lately! I can see how easily it would be to slip into the fast food regime, I mean I have to feed my family at 4:30 in order to get out the door by 5:15ish so we can make practices. Some days I feel like I should be getting the "early bird" special.
Anyway, tonight I made this really easy soup and everyone in the family loved it! Even Riley asked for seconds....which, when it comes to soup...Riley only asks for seconds when I make Nicole's Crab Soup recipe and now this!! This soup would also be nice for a tailgating party....make ahead and place in a crock pot or ladle into a thermos to take along to the game!
Ham, Potato, Corn Soup
3 1/2 Cups peeled, diced potatoes
1/4 C. chopped onion
1 C. diced ham
3 1/4 C. Water
2 Tbsp. Chicken Bouillon
2 Cans Creamed Sweet Corn
4 Tbsp. Butter
4 Tbsp. Flour
2 1/2 C. Milk
DIRECTIONS: Combine potatoes, onion, ham and water. Bring to a boil and then cook over medium heat until potatoes are tender. (Approx. 15 minutes). Stir in chicken bouillon. In separate saucepan melt butter and whisk in flour, whisking constantly until thick. SLOWLY whisk milk in (so no lumps form), until all milk has been added. Continue whisking until mixture thickens. Add milk mixture to potato and ham. Stir. Add creamed corn and cook until heated through. Makes 8 one cup servings!

Snowy Night....
The snow began to fall and I thought....hmmm, soup sounds good for dinner!! (I told you I love soup). We made a Mini-Meatball Alphabet Vegetable Soup. It was yummy with the grilled cheese sandwiches!! Perfect for a cold, winter night!!
As you can tell by now, I am a semi-homemade kind of gal...

Mini Meatball Vegetable Soup
1 lb. ground beef
1 Egg
1/2 Cup Italian Seasoned breadcrumbs
1 Jar (29 oz) Spaghetti Sauce
6 C. beef broth (you can use canned, I prefer bouillon and hot water)
1 Bag frozen mixed veggies
6 oz. alphabet pasta shapes
1 1/2 tsp. basil
1. Mix ground beef, egg and breadcrumbs. Roll into small balls and place in a 9x13 baking
dish. Pour 1/2 cup broth in bottom of dish. Cover w/ foil and bake at 375 degrees for approx.
45 minutes.
2. In large saucepan, pour spaghetti sauce and beef broth. Bring to a boil and reduce heat.
Add remaining ingredients and simmer for 20 minutes or until pasta is cooked.
3. Ladle into soup bowls and sprinkle w/ parmesan cheese!
NOTE: Because the pasta tends to thicken up the soup, I did add a little additional beef broth at the end of cooking time~but depending on your preference you may want to eat it thicker.

Candy Bar Cookies
1 Cup Butter, softened
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Egg
1 tsp. vanilla
2 Cups Flour
1 tsp. baking soda
1 1/2 Cups Quick Cooking Oats
1 Cup Flaked Coconut
5 Milk Chocolate Bars
In a large bowl, cream together butter and sugars. Beat in egg and vanilla. Combine flour and baking soda. Gradually add to creamed mixture. Beat in oats and coconut. Roll into 1" balls and place 2" apart on baking sheet; flatten slightly. Bake at 350 for 11 minutes. Break candy bar into 12 pieces and press chocolate piece onto center of each cookie. Remove to wire racks for cooling.
